Sausage and Egg Strata


1 bag seasoned croutons (about 4 cups)

1 (16 oz.) roll breakfast sausage

½ cup diced red bell pepper

¼ cup sliced green onions

2 cups shredded cheddar cheese

8 eggs

2 cups milk

½ teaspoon dry mustard

¼ teaspoon pepper

Salt to taste



Preheat oven to 350 degrees.  Arrange croutons in a greased 9 x 13 baking dish.  In a skillet, brown sausage.  Add red bell pepper and green onions to skillet when sausage is nearly done.  Drain well; spoon sausage, peppers and onions evenly over croutons.  Sprinkle with cheese.  Whisk together eggs and milk, adding dry mustard and pepper, with salt to taste. (Add salt sparingly, as croutons may be generously seasoned.)  Pour egg mixture over all.  Bake for 30 minutes, or until a knife inserted near the center comes out clean.


Serves: 12


Note:  Strata may be prepared ahead, covered and refrigerated overnight.  Before baking, allow ingredients to come to room temperature, or add an additional 10-15 minutes of baking time.
