Brazilian French Toast

2 very ripe bananas

1 ½ C almond milk

2 TBS cornstarch

1 tsp vanilla extract

1TBS unsweetened coca powder

1 tsp ground cinnamon

1 stale baguette, sliced diagonally

Tub of Earth Balance vegan butter

Maple syrup

Sliced berries

 

Blend bananas, almond milk, cornstarch and vanilla in a food processor until smooth.  Spread out the baguette slices on a baking pan and pour the banana mixture over the bread.  Allow to soak for about 10 minutes, flip and soak another 10. 

Preheat a large skillet over medium heat, spray with cooking spray.  Begin to cook the soaked bread in batches, keeping the cooked bread warm in a oven or under tin foil.  When ready to serve, mix together the cocoa powder and cinnamon, then sift over the bread.  Top with Earth Balance, maple syrup and berries.
