BLT Egg Bake



1 pound bacon, crisply cooked, crumbled

2 cups chopped seeded tomatoes

½ cup sliced green onions

2 cups shredded Monterey Jack cheese (8 oz.)

12 eggs

1 cup milk

1 ¼ cups Bisquick baking mix

¾ teaspoon salt




Shredded lettuce

Quartered cherry tomatoes

Additional crumbled bacon



Heat oven to 350 degrees.  Spray 9x13 glass baking dish with cooking spray.  Layer bacon, tomatoes, green onions and cheese in baking dish.  In a large bowl, stir eggs, milk, Bisquick mix and salt with wire whisk until blended.  Pour over ingredients in baking dish.


Bake 40-45 minutes or until knife inserted in center comes out clean.  Let stand 10 minutes before cutting.  Spread with mayonnaise or serve on the side, if desired.  Top with lettuce, tomatoes and bacon.
