St. Louis (KSDK) -- More and more people are choosing the Billy Goat Chip Company for potato chips to satisfy their salty cravings.

"The hardest way you can do it is the way we do it," explains Rob Lyons, one of the owners of The Billy Goat Chip Company.

You see, for these guys, creating the perfect potato chip is an art.

"They're a hand made chip so you have to make it by hand," adds Rob's business partner Brian Roth.

So, each chip is cut by hand, long ways, rinsed and kettle cooked in a cute little building on Loughborough.

"Right now we do about 6,000 to 8,000 pounds of raw potatoes a week," explains Roth.

It all started in 2002 as a side item at their restaurant, but it didn't take long to realize it was a stand-out item rather than a side. So they closed their restaurant and decided to focus on chips.

"What we're trying to do is bring out the potato," Lyons says.

Of course each chip is sprinkled with a magical dust, then bagged, boxed and hand delivered to more than 150 places, which by the way, you can find when you click on their link.

It's not as if these guys hope to one day dethrone Lays.

"Our focus is to be St. Louis's potato chip.  We want to stay hand made, handcrafted, the local guy," Lyons added.

The Billy Goat Chip Company is located at 4993 Loughborough Avenue in St. Louis.  You can buy Billy Goat Chip Company chips at area retailers and place special orders by calling the company at (314) 353-4628.
